    Prepare the Risotto

    In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add the Arborio rice and stir to coat the grains. Cook for 1-2 minutes, until the rice is lightly toasted.

    Add Broth

    Gradually add the vegetable broth, one cup at a time, stirring frequently. Allow each cup to be absorbed before adding the next. This process will take about 20 minutes.

    Stir in Vegetables and Cheese

    Once the rice is creamy and al dente, stir in the red and yellow bell peppers, Parmesan cheese, and butter. Season with salt and black pepper to taste.

    Sear the Seabass

    In a large skillet, heat the remaining 2 tablespoons of olive oil over medium-high heat. Season the Chilean seabass fillets with salt and black pepper. Place the fillets in the skillet and sear for 4-5 minutes on each side, or until cooked through and golden brown.

    Prepare Seasonal Vegetables

    In the same skillet, add the seasonal vegetables and sauté for 3-4 minutes, until tender but still crisp.

    Plating

    To serve, spoon the roasted pepper risotto onto each plate, top with a seared seabass fillet, and arrange the sautéed vegetables alongside. Drizzle with balsamic glaze.
