    Prepare the crust

    Preheat your oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, 1/4 cup of granulated sugar, and melted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.

    Bake the crust

    Bake the crust in the preheated oven for about 10 minutes. Remove from the oven and allow to cool slightly while you prepare the filling.

    Make the filling

    In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the remaining 1/4 cup of granulated sugar and mix until well combined. Add the sour cream and vanilla extract, mixing until smooth.

    Add the eggs

    Add eggs one at a time, mixing on low speed until just incorporated. Be careful not to overmix.

    Pour the filling

    Pour the cream cheese filling over the cooled graham cracker crust in the springform pan.

    Bake the cheesecake

    Bake in the preheated oven for 55-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour.

    Cool and chill

    Remove the cheesecake from the oven and let it cool at room temperature. Once cooled, refrigerate for at least 4 hours or overnight before serving.
