    Prepare the Steak

    Season the Black Angus top sirloin steaks with salt and black pepper on both sides.

    Sear the Steak

    In a large skillet, heat olive oil over medium-high heat. Add the steaks and sear for 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest.

    Make the Mashed Potatoes

    Prepare the mashed potatoes by boiling them until fork-tender. Drain and mash with butter, salt, and pepper to taste.

    Cook the Vegetables

    Sauté seasonal vegetables in the same skillet over medium heat until tender, about 5-7 minutes.

    Prepare the Red Wine Demi-Glace

    In the skillet, add minced garlic and cook for 1 minute. Pour in red wine and beef stock, scraping the bottom of the skillet to deglaze. Simmer until reduced by half, then strain if desired.

    Slice the rested steak and serve with a generous scoop of mashed potatoes, sautéed vegetables, and drizzle with red wine demi-glace.
