Prepare the Orange Gastrique
In a small saucepan, combine orange juice and sugar. Bring to a boil over medium heat, stirring until the sugar dissolves. Reduce heat and simmer until the mixture thickens, about 10-15 minutes. Add orange zest and remove from heat. Let it cool.

Melt the Chocolate
In a heatproof bowl, melt the bittersweet chocolate over a double boiler or in the microwave. Stir until smooth and let it cool slightly.

Whip the Cream
In a mixing bowl, whip heavy cream using an electric mixer until soft peaks form. Set aside about 1/4 for garnish.

Whisk Egg Yolks
In another bowl, whisk together egg yolks and granulated sugar until pale and frothy. Slowly add the melted chocolate and vanilla extract, mixing well.

Fold in the Cream
Gently fold the whipped cream into the chocolate mixture until fully incorporated.

Chill the Mousse
Spoon the mousse into serving glasses or bowls and refrigerate for at least 2 hours, or until set.
