    Prepare the Scallion Mashed Potatoes

    Boil potatoes until tender, then mash with scallions, butter, salt, and pepper.

    Cook the Asparagus

    Blanch asparagus in boiling water for 2-3 minutes, then transfer to ice water to stop cooking. Season with salt.

    Prepare the Bearnaise Sauce

    In a small saucepan, combine white wine vinegar, tarragon, and shallots. Reduce over medium heat until almost dry. Let cool, then whisk in egg yolks and Dijon mustard. Slowly drizzle in melted butter while whisking until thickened. Stir in crab meat gently.

    Cook the Angus Beef Tenderloin

    Season tenderloin with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear the beef for 4-5 minutes on each side for medium-rare. Let rest for 5 minutes.

    On each plate, place a serving of mashed potatoes, top with asparagus, and place the beef tenderloin on top. Drizzle with crab claw bearnaise sauce.
