Preparing the Tri-tip

Rest the Meat
Once cooked, remove the tri-tip from the smoker and let it rest for at least 15 minutes before slicing.

Prepare the Eggs
While the tri-tip is resting, peel the hard-boiled eggs and slice them into quarters.

Chop Vegetables
Dice the tomatoes, thinly slice the red onion, and chop the fresh parsley.
Assembling the Wedge

Slice the Tri-tip
Slice the rested tri-tip against the grain into thin strips.

Build the Wedge Salad
On a large serving platter, arrange the sliced tri-tip, crispy bacon, blue cheese crumbles, quartered hard-boiled eggs, diced tomatoes, sliced red onion, and chopped parsley. Drizzle ranch dressing over the top.
