Method

House Rub Preparation

    Make the House Rub

    In a small bowl, mix together paprika, brown sugar, garlic powder, onion powder, cayenne pepper, salt, and black pepper until well combined. Set aside.

Fries Preparation

    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips to make fries.

    Fry the Potatoes

    Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Once hot, add the potato strips in batches and fry until golden and crispy, about 5-7 minutes. Remove and drain on paper towels.

    Season the Fries

    While the fries are still hot, sprinkle the house rub over the fries to season them and toss gently to coat.

Brisket Preparation

    Prepare the Brisket

    Slice the cooked brisket into small pieces or shred it, as preferred. Set aside while you prepare the queso.

Poblano Queso Preparation

    Roast the Poblano Peppers

    Char the poblano peppers over an open flame or in a broiler until the skin is blistered. Remove from heat, place in a bowl, and cover to steam for about 10 minutes. Peel the skin, remove seeds, and chop.

    Make the Queso

    In a saucepan over medium heat, combine the cream cheese, shredded cheddar cheese, milk, garlic powder, onion powder, and chopped poblano peppers. Stir until melted and smooth. Season with salt to taste.

Baked Beans Preparation

    Heat the Baked Beans

    In a saucepan, heat the canned baked beans over medium heat until warmed through. Stir occasionally.

Chipotle Lime Ranch Preparation

    Mix the Ranch Dressing

    In a small bowl, combine ranch dressing, chipotle powder, and lime juice. Mix well and adjust seasoning if necessary.

Assembly

    Assemble the Swamp Fries

    In a large platter, layer the seasoned fries, followed by the brisket pieces, hot baked beans, and poblano queso. Top with corn chips and drizzle with chipotle lime ranch.

    Finely slice the green onions and sprinkle them over the assembled swamp fries before serving.
