Preparation

  1. 1

    Prepare the Tri Tip

If not already smoked, season the tri tip with salt and pepper. Smoke it at 225°F for about 2-3 hours or until it reaches an internal temperature of 135°F for medium-rare. Let it rest for 10 minutes before slicing.

  2. 2

    Cook the Bacon

In a skillet over medium heat, cook the bacon until crispy, about 6-8 minutes. Remove and let drain on paper towels, then chop into small pieces.

  3. 3

    Boil the Eggs

Place the eggs in a pot and cover with water. Bring to a boil, then cover and remove from heat. Let sit for 10-12 minutes. Cool under cold water, peel, and chop.

  4. 4

    Chop the Vegetables

Dice the tomato, finely chop the red onion, and roughly chop the parsley.

Assembly

  1. 5

    Combine Ingredients

In a large bowl, combine the sliced smoked tri tip, chopped bacon, chopped hard-boiled eggs, diced tomato, red onion, parsley, and blue cheese crumbles.

  2. 6

    Dress the Salad

Drizzle ranch dressing over the salad mixture and toss gently to combine. Add more dressing as needed to taste.

  3. 7

    Serve

Serve immediately in bowls or on a platter. Enjoy your delicious tri tip chopped salad!
