Preparing the Chili

    Sear the Brisket

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the brisket with salt and black pepper and sear it on all sides until browned, about 5-7 minutes. Remove the brisket and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped onion, garlic, green bell pepper, and jalapeño. Sauté for about 5 minutes until the vegetables are softened.

    Add the Base Ingredients

    Stir in the diced tomatoes, tomato paste, beef broth, chili powder, ground cumin, smoked paprika, and return the brisket to the pot. Bring the mixture to a boil.

    Simmer the Chili

    Reduce the heat to low, cover the pot, and let the chili simmer for about 2 hours, or until the brisket is tender. Check occasionally and stir as necessary.

    Shred the Brisket

    Once the brisket is tender, remove it from the pot and shred it with two forks. Return the shredded brisket to the pot and stir to combine.

    Taste the chili and adjust seasoning with salt and pepper if needed.

    Chop the green onions and set aside.
