    Prepare the vegetables

    Peel and chop the carrots and potatoes into bite-sized pieces. Dice the onions and mince the garlic cloves.

    Brown the beef shank

    In a large pot or Dutch oven, heat a small amount of oil over medium-high heat. Add the smoked beef shank and sear it for about 4-5 minutes on each side until browned.

    Add vegetables

    Once the beef is browned, add the diced onions and minced garlic to the pot. Sauté for 2-3 minutes until the onions are translucent.

    Combine liquids and seasonings

    Pour in the beef broth and water to the pot. Add the carrots, potatoes, bay leaves, thyme, salt, and black pepper. Stir to combine.

    Simmer the stew

    Bring the stew to a boil, then reduce the heat to low. Cover and let it simmer for about 2-3 hours, or until the beef is tender and the flavors meld together.
