Salad Preparation

    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Once done, remove from the skillet and place on paper towels to drain excess fat.

    Prepare the Hard Boiled Eggs

    Place the eggs in a saucepan and cover with water. Bring to a boil, then cover and remove from heat. Let sit for 12 minutes, then transfer to an ice bath to cool. Once cooled, peel and chop the eggs.

    Chop the Vegetables

    Dice the tomatoes and finely chop the red onion and fresh parsley.

    Combine Salad Ingredients

    In a large mixing bowl, combine the chopped tomatoes, red onion, hard-boiled eggs, blue cheese crumbles, and chopped parsley. Crumble the cooked bacon and add it to the bowl as well.

    In a small bowl, whisk together the olive oil, red wine vinegar, salt, and black pepper until well combined.
