Method

Crust Preparation

  1. 1

Preheat your oven to 350°F (175°C).

  2. 2

In a mixing bowl, combine the graham cracker crumbs, granulated sugar, melted butter, and salt. Mix until well combined.

  3. 3

Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

  4. 4

Bake the crust in the preheated oven for 10 minutes, then remove and let it cool while preparing the filling.

Filling Preparation

  1. 5

In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

  2. 6

Gradually add in the granulated sugar, mixing until fully incorporated.

  3. 7

Add sour cream and vanilla extract, mixing until smooth.

  4. 8

Add the eggs one at a time, mixing on low speed until just combined after each addition.

  5. 9

Gently fold in the seasonal fruit puree until evenly distributed.

  6. 10

Pour the filling over the cooled crust in the springform pan.

Baking and Cooling

  1. 11

Bake the cheesecake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly.

  2. 12

Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour to prevent cracks.

  3. 13

Remove the cheesecake from the oven and let it cool to room temperature, then refrigerate for at least 4 hours, preferably overnight.

Serving

  1. 14

Once chilled, run a knife around the edge of the springform pan before releasing the sides.

  2. 15

Top the cheesecake with whipped cream, fresh seasonal fruit slices, and mint leaves if desired.

  3. 16

Slice and serve chilled. Enjoy your seasonal cheesecake!
