Preparation

    Chill the Glasses

    Place four old-fashioned glasses in the freezer to chill while you prepare the cocktails.

    Prepare the Absinthe Rinse

    In each chilled glass, pour 0.5 oz of absinthe and swirl it around to coat the inside of the glass. Discard any excess absinthe and set the glasses aside.

Mixing the Cocktails

    Buffalo Trace Sazerac

    In a mixing glass filled with ice, combine 1 oz of Buffalo Trace bourbon, 0.5 oz of simple syrup, and 2 dashes of Peychaud's bitters. Stir until well chilled, then strain into the prepared glass.

    EH Taylor Small Batch Sazerac

    In the same mixing glass, add 1 oz of EH Taylor Small Batch bourbon, 0.5 oz of simple syrup, and 2 dashes of Peychaud's bitters. Stir until well chilled, then strain into a second prepared glass.

    Blanton's Sazerac

    Repeat the process with 1 oz of Blanton's bourbon, 0.5 oz of simple syrup, and 2 dashes of Peychaud's bitters in the mixing glass. Stir and strain into a third prepared glass.

    Rip Van Winkle Sazerac

    Finally, mix 1 oz of Rip Van Winkle 12 yr bourbon, 0.5 oz of simple syrup, and 2 dashes of Peychaud's bitters in the mixing glass. Stir and strain into the fourth prepared glass.

Garnishing

    Add Lemon Peel

    Express the oils from a piece of lemon peel over each Sazerac cocktail and drop the peel into the glass as a garnish.
