Caramelizing Onions and Peppers

Caramelize the Onions
In a skillet over medium heat, melt 1 tablespoon of butter. Add the sliced onions and cook until they are soft and caramelized, about 10-15 minutes, stirring occasionally.

Preparing Chipotle Lime Ranch

Mix the Sauce
In a small bowl, combine the ranch dressing, chipotle in adobo sauce, and lime juice. Mix well until fully combined and set aside.
Assembling and Cooking Quesadillas

Start Cooking the Quesadilla
Heat a large skillet over medium heat and add 1 tablespoon of butter. Once melted, place one flour tortilla in the skillet.

Cook One Side
Fold the tortilla over to cover the filling. Cook until the bottom is golden brown and the cheese starts to melt, about 3-4 minutes.

Cook Other Side
Carefully flip the quesadilla and cook the other side until golden and crispy, about another 3-4 minutes. Remove from skillet and repeat with remaining tortillas and filling.
Serving

Serve Quesadilla
Cut each quesadilla into wedges and serve hot with pico de gallo and the chipotle lime ranch sauce on the side.
