Preparation of Ingredients

    Prepare the Potatoes

    Wash and peel the potatoes, then cut them into uniform chunks. Place them in a large pot of salted water.

    Cook the Potatoes

    Bring the pot of water to a boil, then reduce heat and simmer for about 15-20 minutes or until the potatoes are tender but not mushy. Drain and let cool.

    Cook the Bacon

    In a skillet over medium heat, cook the bacon until crispy. Remove from skillet and place on paper towels to drain excess grease, then crumble once cool.

    Chop the Vegetables

    Finely chop the green onions and celery while the potatoes and bacon are cooling.

Mixing the Salad

    Combine Ingredients

    In a large mixing bowl, combine the cooled potatoes, crumbled bacon, chopped green onions, and celery.

    Prepare the Dressing

    In a separate bowl, mix together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper until well combined.

    Combine Dressing and Salad

    Pour the dressing over the potato mixture and gently fold until all ingredients are coated evenly.

    Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld. Serve chilled.
