Prepare the House Rub
In a small bowl, combine paprika, garlic powder, onion powder, brown sugar, salt, black pepper, and cayenne pepper. Mix well and set aside.

Scoop and Season
Remove the potatoes from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out some of the flesh, leaving a thin layer. Season the insides with the house rub.

Add Toppings
Sprinkle the insides with cheddar cheese and crumbled cooked bacon. Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Garnish
Remove from the oven and top with dollops of sour cream and chopped green onions.
Brisket Chili

Cook the Chili
In a large pot over medium heat, sauté chopped onion and minced garlic until translucent. Add the cooked and shredded brisket, kidney beans, diced tomatoes, chili powder, cumin, beef broth, salt, and black pepper. Stir well to combine.

Simmer
Bring the mixture to a boil, then reduce the heat and let it simmer for 30-40 minutes, stirring occasionally.
