Method
Preparing the Sweet Potatoes

Preheat the Oven
Preheat your oven to 400°F (200°C).

Wash and Prepare the Sweet Potatoes
Thoroughly wash the jumbo sweet potatoes under running water to remove any dirt. Pat them dry with a clean towel.

Pierce the Sweet Potatoes
Using a fork, pierce each sweet potato several times on all sides to allow steam to escape during cooking.

Bake the Sweet Potatoes
Place the sweet potatoes directly on the oven rack or on a baking sheet lined with foil. Bake for about 45-60 minutes, or until they are tender and can be easily pierced with a fork.
Making the Cinnamon Butter

Soften the Butter
In a medium bowl, add 1 cup of unsalted butter and let it sit at room temperature until softened.

Mix the Ingredients
Add 2 tsp of ground cinnamon, 2 tbs of brown sugar, and 1 tsp of vanilla extract to the softened butter. Mix well with a fork or a hand mixer until all ingredients are fully combined and smooth.

Chill the Cinnamon Butter
Transfer the cinnamon butter to a small serving dish or roll it into a log using parchment paper, then refrigerate for at least 30 minutes to firm up.
Serving

Serve the Sweet Potatoes
Once the sweet potatoes are done baking, remove them from the oven and let them cool for a few minutes. Cut a slit down the center of each sweet potato and fluff the insides with a fork.

Add Cinnamon Butter
Top each sweet potato with a generous dollop of cinnamon butter and allow it to melt into the warm flesh.
