    Prepare the Vegetables

    Wash and peel the potatoes, then dice them into small cubes. Chop the onion, celery, and carrot finely. Mince the garlic.

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, celery, and carrot. Sauté for about 5 minutes until they are softened.

    Stir in the minced garlic, thyme, paprika, salt, and black pepper. Cook for another minute until fragrant.
