Prepare the Potatoes

Preheat the oven to 400°F (200°C). Wash and prick the russet potatoes with a fork. Place them directly on the oven rack or on a baking sheet and bake for about 45-60 minutes, or until fork-tender.

In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.

Stir in kidney beans, diced tomatoes, chili powder, cumin, salt, and black pepper. Simmer for 20 minutes, stirring occasionally.
Make the Mac and Cheese

In a pot of boiling salted water, cook the elbow macaroni according to package instructions. Drain and set aside.

Fold the cooked macaroni into the cheese sauce until well combined.
