Chili Preparation

    Cook the Onions and Garlic

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.

    Add the Remaining Ingredients

    Add the shredded brisket, canned diced tomatoes (with juice), red kidney beans, chili powder, cumin, salt, and black pepper to the pot. Stir to combine.

    Simmer the Chili

    Bring the mixture to a simmer. Reduce heat to low and let it cook for at least 30 minutes, stirring occasionally. This allows the flavors to meld together.

    Cook the Fries

    While the chili is simmering, prepare the French fries according to the package instructions. Bake or fry until crispy and golden brown.

Assembly

    Combine and Serve

    On a serving plate, layer the hot fries, followed by a generous portion of brisket chili. Sprinkle the shredded cheddar cheese on top, allowing it to melt slightly from the heat of the chili. Finish with diced red onion and a dollop of sour cream. Serve immediately.
