Prepare the Filling

Mix the Filling
In a large mixing bowl, combine the shredded brisket, pimento cheese, chopped green onion, cooked corn, and diced poblano pepper. Mix well until all ingredients are evenly distributed.
Make Chipotle Blackberry BBQ Sauce

Combine Sauce Ingredients
In a small saucepan over medium heat, combine blackberry preserves, minced chipotle peppers, apple cider vinegar, Worcestershire sauce, salt, and black pepper. Stir until well combined and bring to a simmer.

Simmer Sauce
Reduce heat to low and let the sauce simmer for 10-15 minutes, stirring occasionally, until it thickens slightly. Remove from heat and let cool.
Assemble the Egg Rolls

Prepare Egg Roll Wrappers
Lay an egg roll wrapper on a clean surface with a corner pointing towards you. Place about 2-3 tablespoons of the filling mixture in the center of the wrapper.

Roll the Egg Rolls
Fold the bottom corner over the filling, then fold in the sides, and roll tightly to enclose the filling. Use a bit of water to seal the top corner of the wrapper.
Fry the Egg Rolls

Heat Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Egg Rolls
Carefully place the egg rolls in the hot oil, a few at a time, and fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
