    Soak the Beans

    Rinse the dried navy beans under cold water and remove any debris. Place them in a large bowl and cover with 4 cups of water. Let them soak overnight or for at least 8 hours.

    Preheat Oven

    Preheat your oven to 325°F (163°C).

Cooking

    Cook the Beans

    Drain the soaked beans and transfer them to a large pot. Add fresh water (enough to cover the beans) and bring to a boil. Reduce heat and simmer for about 45 minutes to 1 hour, or until the beans are tender. Drain and set aside.

    Prepare the Sauce

    In a mixing bowl, combine ketchup, brown sugar, molasses, Dijon mustard, apple cider vinegar, salt, and black pepper. Mix well until smooth.

    Sauté Aromatics

    In a skillet over medium heat, sauté the diced onion until translucent (about 5 minutes). Add the minced garlic and cook for an additional minute until fragrant.

    Combine Everything

    In a large baking dish, combine the cooked beans, sautéed onion and garlic, and the prepared sauce. If using, add the chopped bacon on top.

    Bake

    Cover the baking dish with aluminum foil and bake in the preheated oven for 1 hour. Remove the foil and bake for an additional 30 minutes, or until the sauce is bubbly and thickened.

    Allow the baked beans to cool slightly before serving. Enjoy them as a side dish or as a hearty main course!
