Bumpkins

Method

Bumpkins

  1. 1

    Prepare the Batter

In a large bowl, mix together pumpkin puree, granulated sugar, melted butter, eggs, and vanilla extract until well combined.

  2. 2

    Combine Dry Ingredients

In a separate bowl, whisk together all-purpose flour, baking powder, pumpkin pie spice, and salt.

  3. 3

    Combine Mixtures

Gradually add the dry mixture to the wet mixture, stirring until just combined.

  4. 4

    Bake

Pour the batter into a greased baking dish and bake at 350°F (175°C) for 25-30 minutes or until a toothpick comes out clean.

Chips & Queso

  1. 5

    Prepare Queso

In a saucepan over low heat, combine Velveeta cheese, cream cheese, salsa, and sliced jalapeños. Stir until melted and smooth.

  2. 6

    Serve

Transfer the queso to a serving bowl and serve warm with corn tortilla chips.

Hand Grenades

  1. 7

    Cook Beef and Bacon

In a skillet, cook ground beef and chopped bacon over medium heat until browned. Drain excess fat.

  2. 8

    Combine Ingredients

In a bowl, mix cooked beef and bacon with cream cheese, shredded cheddar cheese, Worcestershire sauce, garlic powder, onion powder, salt, and black pepper.

  3. 9

    Form Balls

Shape the mixture into small balls (about the size of a golf ball).

  4. 10

    Bake

Place the balls on a baking sheet and bake at 375°F (190°C) for 20-25 minutes until golden.

Smoked Wings

  1. 11

    Prepare Wings

In a large bowl, toss chicken wings with olive oil, paprika, garlic powder, onion powder, salt, and black pepper until well coated.

  2. 12

    Smoke the Wings

Place wings in a smoker set to 225°F (107°C) and smoke for about 1.5 hours.

  3. 13

    Glaze with BBQ Sauce

During the last 15 minutes of smoking, brush wings with BBQ sauce.

  4. 14

    Serve

Remove wings from the smoker and serve hot.
