Make the dough
In a medium mixing bowl combine 1.5 cups all-purpose flour, 0.5 tsp instant yeast, 0.5 tsp sugar, and 0.5 tsp salt. Whisk briefly to combine.

Add liquids
Pour in 0.5 cup warm water (about 105–115°F / 40–46°C) and 1 tbsp olive oil. Stir with a wooden spoon or spatula until a shaggy dough forms and no large pockets of dry flour remain.

Knead
Turn the dough onto a lightly floured surface and knead for 5–7 minutes until smooth and slightly elastic. If dough is sticky, dust with up to 1–2 tablespoons extra flour, adding sparingly.

Shape
Divide the dough into 6 equal pieces (for 12 pieces, divide into 12). Roll each piece into a 7–8 inch (for 6) or 4–5 inch (for 12) thin cylinder about 0.5 inch thick. Place shaped sticks on a parchment-lined baking sheet with at least 1/2 inch between them for slight expansion.

Preheat and brush
Preheat oven to 425°F (220°C). In a small bowl combine 1 tbsp melted butter with 1/4 tsp garlic powder. Using a pastry brush, lightly brush the tops of each breadstick with the garlic-butter mixture. Sprinkle with 1/2 tsp dried parsley and a pinch (about 1/4 tsp) coarse sea salt if using.

Bake
Bake in the preheated oven for 10–12 minutes, or until the breadsticks are golden brown on top and sound hollow when tapped. Thinner breadsticks (if you made 12) may only need 8–10 minutes—watch closely.

Sauté garlic
In a small saucepan heat 1 tsp olive oil over medium-low heat. Add 1 minced clove garlic and cook 30–45 seconds, stirring constantly, until fragrant but not browned.

Add tomatoes & season
Add 1 cup canned crushed tomatoes to the pan. Stir in 1/2 tsp dried oregano, 1/4 tsp dried basil, 1/4 tsp salt, 1/8 tsp black pepper, 1/4 tsp sugar (optional), and 1/8 tsp red pepper flakes (optional).

Simmer
Reduce heat to low and simmer gently, uncovered, for 8–12 minutes, stirring occasionally, until slightly reduced and brightened in flavor. Taste and adjust salt, sugar, or herbs as needed.

Finish & serve
Remove from heat and stir in torn fresh basil leaves if using. Transfer sauce to a small serving ramekin or bowl. Serve warm alongside the breadsticks for dipping.
