1. Prepare cheese sticks

If using a block of mozzarella, cut into 12 uniform sticks about 3–4 inches long and 1/2 inch thick. Pat each stick dry with paper towels to remove surface moisture — this helps the coating adhere.

2. Set up breading stations

Place the 1 cup flour in a shallow dish. In a second shallow bowl, whisk together the 3 eggs and 3 tbsp milk until smooth. In a third large shallow bowl combine the 2 cups Italian breadcrumbs, 1 cup panko (if using), 1/4 cup grated Parmesan, 1 tsp dried oregano, 1 tsp garlic powder, 1 tsp salt, and 1/2 tsp black pepper; mix thoroughly.

3. Dredge the mozzarella

Working one at a time, toss a mozzarella stick in the 1/4 cup flour (this is the separate dredging flour) to coat lightly, shaking off excess. Dip it into the egg mixture, then press into the breadcrumb mixture to coat all sides. For a more secure coating, repeat: return the coated stick to the egg, then again to the breadcrumbs for a double coating. Place finished sticks on a baking sheet lined with parchment and freeze for at least 30 minutes (recommended) or 15 minutes minimum. Freezing helps prevent cheese from leaking during frying.

4. Heat oil

Pour about 3–4 cups vegetable oil into a deep, heavy skillet or medium pot to a depth of ~1.5–2 inches (enough for shallow frying). Heat oil over medium-high heat to 350°F (175°C). If you don't have a thermometer, test by dropping a small breadcrumb into the oil — it should sizzle and turn golden in about 30–45 seconds.

5. Fry the sticks

Fry the frozen (or chilled) mozzarella sticks in batches of 3–4, taking care not to crowd the pan. Fry 1–2 minutes total, turning once, until coating is golden brown — do not overcook (longer frying will cause cheese to leak). Use a slotted spoon to transfer sticks to a plate lined with paper towels to drain. If oil temperature drops, let it return to 350°F before frying the next batch.

6. Finish and serve

Warm the marinara sauce in a small saucepan or microwave until heated through. Transfer mozzarella sticks to a serving platter, sprinkle with chopped parsley and additional grated Parmesan if desired. Serve immediately with warm marinara for dipping.

7. Make-ahead and baking alternative

For baking instead of frying: place frozen double-breaded sticks on a parchment-lined baking sheet, spray lightly with cooking oil spray, and bake in a preheated 425°F (220°C) oven for 8–10 minutes, flipping halfway, until golden. Keep a close eye so cheese doesn't melt through. For best results, freeze before baking and serve immediately.
