Fried Catfish

    Prep the Catfish

    Rinse the catfish fillets under cold water and pat dry with paper towels. Soak the fillets in buttermilk for at least 30 minutes.

    In a shallow dish, combine cornmeal, flour, cayenne pepper, salt, and black pepper. Mix well.

    Fry the Catfish

    Heat vegetable oil in a large skillet over medium-high heat. Remove catfish from buttermilk, letting excess drip off, then dredge in the cornmeal mixture. Fry the fillets until golden brown, about 4-5 minutes per side. Drain on paper towels.

    Wash and cut the seasonal fruit into bite-sized pieces. Serve alongside the fried catfish.
