    Marinate the Chicken

    In a bowl, mix together the olive oil, minced garlic, lemon juice, dried oregano, salt, and black pepper. Place the chicken breasts into the marinade, ensuring they are well coated. Cover the bowl and refrigerate for at least 30 minutes.

    Cook the Chicken

    Preheat the grill or stovetop grill pan over medium-high heat. Remove the chicken from the marinade and place it on the grill. Cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let rest for a few minutes before slicing.

    Cook the Quinoa

    Rinse the quinoa under cold water. In a saucepan, bring the vegetable broth to a boil. Add the rinsed quinoa, reduce the heat to low, cover, and simmer for about 15 minutes or until the liquid is absorbed. Remove from heat and let it sit for 5 minutes before fluffing with a fork.
