Soup Ingredients

Method

Soup Directions

  1. 1

    Sauté Vegetables

In a large pot, heat olive oil over medium heat. Add chopped onions and sauté for about 5 minutes, until softened. Stir in minced garlic and cook for an additional minute until fragrant.

  2. 2

    Add Remaining Vegetables

Add diced carrots, celery, and potatoes to the pot. Stir well and cook for another 5 minutes, allowing the vegetables to soften slightly.

  3. 3

    Combine Broth and Seasonings

Pour in the vegetable broth and add the diced tomatoes, bay leaves, thyme, salt, and pepper. Stir to combine all ingredients.

  4. 4

    Simmer the Soup

Bring the soup to a boil, then reduce the heat to low. Cover and let it simmer for about 30 minutes, or until the vegetables are tender.

  5. 5

    Finish and Serve

Remove the bay leaves and stir in the chopped parsley. Taste and adjust seasoning if necessary. Serve hot.

Salad Directions

  1. 6

    Prepare the Salad

In a large bowl, combine mixed greens, halved cherry tomatoes, sliced cucumber, and thinly sliced red onion.

  2. 7

    Make the Dressing

In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper until emulsified.

  3. 8

    Toss the Salad

Pour the dressing over the salad and toss gently to coat all the ingredients evenly.

  4. 9

    Add Feta

Sprinkle crumbled feta cheese on top of the salad before serving.

  5. 10

    Serve

Serve the salad immediately alongside the bowl of soup.
