Prepare the Dough
In a large bowl, combine flour and salt. Make a well in the center and add eggs and olive oil. Mix until a dough forms, then knead on a floured surface until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Make the Filling
In a skillet, sauté minced garlic in olive oil until fragrant. Add fresh spinach and cook until wilted. Remove from heat and let cool. Mix the spinach with ricotta cheese, salt, and black pepper.

Roll Out the Dough
After resting, divide the dough into quarters. Roll out each piece on a floured surface until thin, about 1/16 inch thick.

Assemble the Ravioli
Cut the rolled dough into squares. Place a teaspoon of filling on one half of the square, fold the other half over, and seal the edges with a fork.

Cook the Ravioli
Bring a large pot of salted water to a boil. Add the ravioli and cook for 3-4 minutes or until they float to the surface. Remove with a slotted spoon.

Make the Sugo Rosa Sauce
In a saucepan, heat olive oil and sauté garlic. Add crushed tomatoes and simmer for 10 minutes. Stir in heavy cream and Parmesan cheese. Season with salt and pepper.

Toss the cooked ravioli in the Sugo rosa sauce and garnish with fresh basil before serving.
