Make the Dough
In a large bowl, mix the flour and salt. Make a well in the center and add the eggs. Gradually mix the flour into the eggs until a dough forms. Knead on a floured surface for about 10 minutes until smooth. Wrap in plastic and let rest for 30 minutes.

Prepare the Filling
In a bowl, combine the ricotta cheese, grated Parmesan, black pepper, and fresh basil. Mix well and set aside.

Roll Out the Dough
Divide the dough into quarters. Roll each quarter out to about 1/16 inch thick, using a pasta machine or rolling pin, ensuring it's thin but not tearing.

Form the Ravioli
Place small spoonfuls of the cheese mixture on one half of the rolled-out dough, spacing them about 2 inches apart. Fold the other half over and press down to seal, ensuring there are no air pockets. Cut between the filled sections to form individual ravioli.

Cook the Ravioli
Bring a large pot of salted water to a boil. Add the ravioli and cook for 3-4 minutes, or until they float to the surface. Remove with a slotted spoon and drain.

Serve the ravioli with your choice of Alfredo or marinara sauce. Enjoy!
