Cannoli Shells Preparation

    Make the Dough

    In a large bowl, combine flour, sugar, cocoa powder, cinnamon, and salt. Cut in the butter until the mixture resembles coarse crumbs. In a separate bowl, whisk together the egg and wine. Add to the flour mixture and mix until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth. Wrap in plastic wrap and refrigerate for at least 1 hour.

    Roll and Cut the Dough

    After the dough has chilled, roll it out to about 1/8 inch thick. Use a round cutter (about 4 inches in diameter) to cut circles from the dough.

    Fry the Shells

    Heat the vegetable oil in a deep fryer or large pot to 375°F (190°C). Wrap each dough circle around a metal cannoli tube and seal the edges with a bit of water. Carefully place in the hot oil and fry until golden brown, about 2-3 minutes. Remove and drain on paper towels. Allow to cool slightly, then carefully remove the tubes.
