Marinating the Pork

    Prepare the Marinade

    In a large bowl, combine the soy sauce, Shaoxing wine, minced ginger, minced garlic, five-spice powder, and sugar. Mix well.

    Marinate the Pork

    Add the pork belly to the marinade, ensuring it is well coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 2 hours, preferably overnight.

First Cooking Phase

    Boil the Pork

    After marinating, remove the pork belly from the marinade (reserve the marinade for later use). Place the pork in a pot and cover with water. Bring to a boil and then simmer for about 40 minutes until tender.

    Cool the Pork

    Once cooked, remove the pork from the pot and let it cool. Then slice it into thin strips.

Stir-Frying

    Heat the Oil

    In a large skillet or wok, heat the vegetable oil over medium-high heat.

    Add the sliced bell peppers and onion to the skillet. Stir-fry for about 3-5 minutes until they start to soften.

    Add the sliced pork belly, chopped scallions, chili paste, and reserved marinade to the skillet. Stir-fry for another 5-7 minutes until everything is heated through and well combined.

    Finish with Broth and Sesame Oil

    Pour in the chicken broth and sesame oil. Stir well and cook for an additional 2-3 minutes until the sauce thickens slightly.
