1. Slice the Beef

Thinly slice the beef flank steak against the grain into strips.

2. Prepare the Vegetables

Shred the cabbage and carrots. Finely chop the green onions, and mince the garlic and ginger.

3. Marinate the Beef

In a bowl, combine the sliced beef with soy sauce, oyster sauce, sesame oil, cornstarch, black pepper, and salt. Mix well and let it marinate for 15 minutes.

4. Scramble the Eggs

In a large skillet or wok, heat a small amount of oil over medium heat. Beat the eggs in a bowl and pour them into the skillet. Scramble until fully cooked, then remove and set aside.

5. Cook the Beef

In the same skillet, add a bit more oil if needed and increase the heat to high. Add the marinated beef and stir-fry for about 3-4 minutes until browned and cooked through.

6. Add the Vegetables

To the skillet with the beef, add the shredded cabbage, shredded carrots, minced garlic, and ginger. Stir-fry for another 3-5 minutes until the vegetables are tender but still crisp.

7. Combine with Eggs

Return the scrambled eggs to the skillet, mix everything together, and cook for an additional 1-2 minutes.

Serve the beef and vegetable mixture in flour tortillas. Roll them up and enjoy!
