    Slice the Beef

    Thinly slice the beef flank steak against the grain into strips.

    Prepare the Vegetables

    Shred the cabbage and carrots. Finely chop the green onions, and mince the garlic and ginger.

Cooking

    Marinate the Beef

    In a bowl, combine the sliced beef with soy sauce, oyster sauce, sesame oil, cornstarch, black pepper, and salt. Mix well and let it marinate for 15 minutes.

    Scramble the Eggs

    In a large skillet or wok, heat a small amount of oil over medium heat. Beat the eggs in a bowl and pour them into the skillet. Scramble until fully cooked, then remove and set aside.

    Cook the Beef

    In the same skillet, add a bit more oil if needed and increase the heat to high. Add the marinated beef and stir-fry for about 3-4 minutes until browned and cooked through.
