Prepare the Napa Cabbage
Finely chop the Napa cabbage and sprinkle with a pinch of salt. Let it sit for about 10 minutes to draw out excess moisture, then squeeze out any remaining liquid.

Mix the Filling
In a mixing bowl, combine the ground pork, squeezed Napa cabbage, grated ginger, minced garlic, soy sauce, sesame oil, and ground black pepper. Mix thoroughly until well combined.

Make the Dough
In a bowl, combine the all-purpose flour and salt. Gradually add the water and mix until a dough forms. Knead on a lightly floured surface for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for 20 minutes.
Assembly and Cooking

Roll the Dough
After resting, divide the dough into 8 equal portions. Roll each portion into a thin circle, about 3 inches in diameter.

Fill the Potstickers
Place about 1 tablespoon of the filling in the center of each dough circle. Fold the dough over to create a half-moon shape, and pinch the edges to seal tightly.

Steam the Potstickers
If using a bamboo steamer, line it with parchment paper. Alternatively, use a metal steamer. Arrange the potstickers in the steamer, making sure they are not touching. Steam over boiling water for about 10-12 minutes until the dough is translucent and the filling is cooked through.
