    Prepare the Vegetables

    Wash and slice the zucchini and carrot into thin rounds. Clean and slice the mushrooms. Chop the green onions, separating the white parts from the green.

    Prepare the Garlic

    Peel and mince the garlic cloves.

    Prepare the Tofu

    Gently drain the silken tofu and cut it into cubes.

Cooking

    Sauté the Base

    In a large pot, heat the sesame oil over medium heat. Add the white parts of the green onions and minced garlic, sautéing until fragrant (about 1-2 minutes).

    Add Vegetables

    Add the sliced zucchini, carrots, and mushrooms to the pot. Stir and cook for about 3-4 minutes until the vegetables begin to soften.

    Add Broth and Seasonings

    Pour in the vegetable broth, soy sauce, gochugaru, salt, and black pepper. Bring the mixture to a boil.

    Add Tofu

    Once boiling, gently add the cubed silken tofu to the pot. Reduce the heat to low and let it simmer for about 5-7 minutes, allowing the flavors to meld.

    Finish with Green Onions

    Before serving, stir in the green parts of the chopped green onions and adjust seasoning if necessary. Let it simmer for an additional 2 minutes.
