Method

Preparation

  1. 1

    Prepare the Shrimp and Vegetables

In a bowl, combine the peeled and deveined shrimp with salt and pepper. Set aside. Dice the carrot and slice the green onions. If using frozen peas, thaw them.

  2. 2

    Scramble the Eggs

In a small bowl, beat the eggs with a pinch of salt. Heat 1 tablespoon of cooking oil in a large skillet or wok over medium heat. Pour in the eggs and scramble until just set. Remove from the skillet and set aside.

Cooking

  1. 3

    Fry the Shrimp

In the same skillet, add another tablespoon of cooking oil. Increase the heat to high, then add the shrimp. Cook for about 2-3 minutes, or until the shrimp are pink and cooked through. Remove the shrimp from the pan and set aside.

  2. 4

    Stir-Fry the Vegetables

In the same skillet, add the diced carrot and green peas. Stir-fry for about 2 minutes until the vegetables are tender without losing their crunch.

  3. 5

    Combine Ingredients

Add the cooked rice into the skillet with the vegetables. Pour in the soy sauce and sesame oil. Stir well to combine all ingredients, ensuring the rice is heated through.

  4. 6

    Add Shrimp and Eggs

Return the cooked shrimp to the skillet, along with the scrambled eggs. Toss everything gently to mix and heat through. Finally, stir in the sliced green onions.

  5. 7

    Serve

Taste and adjust seasoning with more salt or pepper if necessary. Serve hot as a main dish.
