Preparation of Seafood

Prepare the Seafood
In a large bowl, combine the cleaned calamari, mussels, and shrimp. Set aside.
Cooking Noodles

Cook the Udon Noodles
In a pot, bring water to a boil. Add the udon noodles and cook according to package instructions, typically about 5-7 minutes. Drain and set aside.
Making the Broth

Prepare the Broth
In a large pot, combine dashi stock, soy sauce, mirin, and sake. Add minced garlic, sliced ginger, and chili flakes. Bring to a gentle simmer.

Cook the Seafood
Add the prepared seafood mix to the simmering broth. Cook for 5-7 minutes or until the mussels have opened and the shrimp are pink and opaque. Season with salt and pepper to taste.

Assemble the Dish
In serving bowls, place a portion of udon noodles. Ladle the seafood broth and seafood mixture over the noodles. Garnish with chopped green onions, nori strips, and toasted sesame seeds.
