Preparation

    Prepare the seafood

    Clean and prepare all seafood: peel and devein the shrimp, clean and slice the squid, and clean the mussels. Set aside.

    Prepare vegetables

    Julienne the carrot, slice the zucchini, and mushrooms. Mince the garlic and ginger, and slice the green onions. Set aside.

Cooking

    Make the broth

    In a large pot, heat sesame oil over medium heat. Add minced garlic and ginger, and sauté until fragrant, about 1-2 minutes.

    Add liquids and flavors

    Pour in the fish stock, soy sauce, gochujang, salt, black pepper, and red chili flakes (if using). Bring to a simmer.

    Cook the vegetables

    Add the julienned carrot, sliced zucchini, and mushrooms to the simmering broth. Cook for about 5-7 minutes until vegetables are tender.

    Add seafood

    Add the prepared shrimp, squid, scallops, and mussels to the pot. Cook for another 5-7 minutes, or until the seafood is cooked through and mussels have opened.

    Cook the noodles

    Meanwhile, in a separate pot, cook the udon noodles according to package instructions. Drain and set aside.

    Combine and serve

    Once the seafood and vegetables are cooked, add the udon noodles to the stew. Stir gently to combine and let simmer for an additional 2 minutes. Garnish with sliced green onions before serving.
