Pancake Batter

Method

Prepare the Batter

    In a mixing bowl, combine the all-purpose flour, water, egg, and salt. Stir until the mixture is smooth and well combined. Set aside to rest for about 10 minutes.

Prepare the Seafood and Vegetables

    Incorporate the chopped green onions, shrimp, squid, and julienned carrot into the batter. Mix gently to ensure the seafood and vegetables are evenly distributed in the batter.

Cook the Pancake

    Heat the Pan

    Heat a large skillet or non-stick frying pan over medium-high heat and add 1 tablespoon of vegetable oil.

    Pour the Batter

    Once the oil is hot, pour half of the batter mixture into the pan, spreading it out evenly to form a circle about 1/4 inch thick.

    Cook Until Golden

    Cook for about 3-4 minutes or until the edges begin to crisp and the bottom is golden brown.

    Flip the Pancake

    Carefully flip the pancake using a spatula and add another tablespoon of oil around the edges if needed. Cook for another 3-4 minutes on the other side until golden brown.

    Repeat

    Remove the pancake from the pan and place it on a paper towel to absorb excess oil. Repeat the process with the remaining batter, adding more oil as necessary.

Serve

    Cut the pancakes into wedges and serve hot with a dipping sauce made of soy sauce and vinegar.
