Prepare the filling

In a mixing bowl, combine ground pork, finely chopped Napa cabbage, grated ginger, minced garlic, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are incorporated.
Assemble the potstickers

Lay out a wonton wrapper on a clean surface. Place a tablespoon of the filling in the center of the wrapper. Dip your finger in water and moisten the edges of the wrapper.

Fold the wrapper in half to form a semi-circle, pressing firmly to seal. Make sure there are no air pockets. Repeat with the remaining wrappers and filling.
Cook the potstickers

In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the potstickers in a single layer, making sure they do not touch.

Fry the potstickers for about 2-3 minutes, or until the bottoms are golden brown.

Carefully pour in 100 ml of water and cover the skillet with a lid immediately. Steam the potstickers for 5-7 minutes, or until the water has evaporated.

Remove the lid and let them cook for an additional 1-2 minutes to crisp up the bottoms again.

Transfer the potstickers to a plate and serve hot with soy sauce or your favorite dipping sauce.
