Prepare the Ingredients
Start by trimming the pork tenderloin of any excess fat and silver skin. Cut the tenderloin into 1-inch thick medallions.

Prepare the Green Onions
While the pork is marinating, wash and chop the green onions into 1-inch pieces, separating the white parts from the green tops.

Cook the Pork
In a large skillet, heat the vegetable oil over medium-high heat. Remove the pork from the marinade (reserve the marinade) and add it to the skillet. Cook for about 4-5 minutes on each side until browned and cooked through. Remove the pork from the skillet and set aside.

Stir-Fry the Green Onions
In the same skillet, add the white parts of the green onions and stir-fry for about 2 minutes until softened. Then, add the green tops and stir-fry for an additional minute.

Return the pork to the skillet, and pour the reserved marinade over it. Cook for an additional 2 minutes, allowing everything to meld. Serve hot, garnished with extra green onions if desired.
