Noodle Preparation

Make the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Create a well in the center and add the eggs and water. Mix until a cohesive dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

Roll and Cut the Noodles
After resting, roll out the dough to about 1/8 inch thick. Cut into thin strips to form noodles.
Pork and Soup Preparation

Cook the Pork
In a pot, add the pork tenderloin and cover with water. Bring to a boil, reduce heat, and simmer for about 20-25 minutes or until cooked through. Remove and shred the pork.

Prepare the Soup Base
In the same pot, add the minced garlic and ginger. Sauté for a minute until fragrant. Add the chicken broth and soy sauce, bringing it to a simmer.

Add Vegetables and Pork
Add the shredded pork, carrots, bell pepper, and Chinese pickles to the broth. Simmer for another 10 minutes until vegetables are tender. Season with salt and pepper to taste.
Noodle Cooking and Serving

Cook the Noodles
In a separate pot of boiling salted water, cook the fresh noodles for about 2-3 minutes or until al dente. Drain and set aside.

Assemble the Soup
In serving bowls, place the cooked noodles, ladle the hot soup with pork and vegetables over the noodles.

Garnish and Serve
Top with chopped green onions and drizzle with chili oil to taste. Serve hot.
