1. Marinate the Shrimp
In a bowl, combine the shrimp, soy sauce, sesame oil, and cornstarch. Toss to coat the shrimp evenly and let them marinate for about 15 minutes.

In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant.
3. Add Vegetables
Add the mushrooms, carrot, and cabbage to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender.
4. Cook Eggs
Push the vegetables to one side of the skillet. Pour the beaten eggs into the empty side and scramble them until fully cooked, then mix with the vegetables.
5. Add Shrimp
Add the marinated shrimp to the skillet and stir-fry until they turn pink and are cooked through, about 3-4 minutes.
6. Finish with Green Onions
Stir in the chopped green onions and remove from heat.
Serving
7. Assemble the Dish
To serve, spoon the shrimp and vegetable mixture onto a Mu Shu pancake or tortilla, drizzle with hoisin sauce, and roll it up or fold it as desired.
8. Serve Warm
Serve the Mu Shu shrimp warm, with extra hoisin sauce on the side for dipping.
