Slice the boneless, skinless chicken breast into thin strips.

Shred cabbage and carrots, slice the green onions, and mushrooms. Set aside.

In a small bowl, whisk together soy sauce, hoisin sauce, sesame oil, rice vinegar, minced garlic, and minced ginger until well combined.
