Cut the boneless chicken breast into bite-sized pieces and set aside.

In a small bowl, combine soy sauce, rice vinegar, sugar, cornstarch, and water. Stir until well mixed and set aside.

Chop the red bell pepper, zucchini, and green onions. Keep the green onion tops separate for garnish.
