Method

Preparation

  1. 1

    Prepare the Ingredients

Slice the pork belly into bite-sized pieces and cube the tofu. Chop the green onions, mince the garlic, slice the onion, and slice the zucchini.

Cooking

  1. 2

    Cook the Pork

In a large pot, heat the sesame oil over medium heat. Add the sliced pork and cook until it is browned and cooked through, about 5-7 minutes.

  2. 3

    Add Vegetables and Kimchi

Add the sliced onion, minced garlic, and zucchini to the pot. Stir and cook for another 3-4 minutes. Then, add the kimchi and cook for an additional 2-3 minutes.

  3. 4

    Add Liquid and Seasonings

Pour in the 4 cups of water and bring to a boil. Then, stir in the gochugaru, soy sauce, and salt to taste. Allow the soup to simmer for 10-15 minutes.

  4. 5

    Add Tofu

Gently add the cubed tofu to the pot and let it simmer for another 5 minutes, allowing the flavors to meld.

  5. 6

    Serve

Ladle the soup into bowls and garnish with chopped green onions before serving.
