Japchae / 잡채 Recipe
Pan fired clear sweet potato noodles (called dangmyeon) with vegetable in sesame oil with soy sauce.

Prepare the Noodles
Soak the sweet potato noodles in warm water for about 30 minutes until they become soft. Drain and set aside.

Cook the Vegetables
In a large skillet or wok, heat 1 tablespoon of sesame oil over medium heat. Stir-fry the carrots and onions for about 3 minutes until they soften. Add the bell pepper and mushrooms and stir-fry for another 3 minutes. Finally, add the spinach and stir-fry until wilted. Remove the vegetables from the skillet and set aside.

Cook the Noodles
In the same skillet, add the soaked sweet potato noodles. Add the soy sauce, sugar, minced garlic, and black pepper. Stir-fry for about 5-7 minutes until the noodles are fully cooked and well combined with the sauce.

Combine and Serve
Add the cooked vegetables back into the skillet with the noodles. Drizzle with the remaining sesame oil, toss everything together, and cook for another 2 minutes. Remove from heat.

Transfer the japchae to a serving dish. Sprinkle with sesame seeds and chopped green onions before serving.
