    Season the Shrimp

    In a bowl, season the peeled and deveined shrimp with salt, black pepper, and garlic powder. Allow to marinate for about 15 minutes.

    Make the Batter

    In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, paprika, and a pinch of salt. In a separate bowl, whisk the egg and cold water together. Gradually add the wet mixture to the dry ingredients until a smooth batter forms.

Frying

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Shrimp

    Dip each marinated shrimp into the batter, allowing excess to drip off. Carefully place the battered shrimp into the hot oil, frying in batches to avoid overcrowding. Fry for about 3-4 minutes or until golden brown and crispy.

    Drain the Shrimp

    Using a slotted spoon, remove the fried shrimp from the oil and place them on a paper towel-lined plate to drain excess oil.

    Prepare the Sauce

    In a small saucepan, combine ketchup, rice vinegar, brown sugar, soy sauce, cornstarch, and water. Stir well and bring to a simmer over medium heat. Cook for about 2-3 minutes until the sauce thickens slightly.

    Arrange the fried shrimp on a serving plate and serve hot with the sweet and sour sauce on the side.
