Prepare the Potatoes
Peel the Russet potatoes using a vegetable peeler. Cut each potato into even sticks, approximately 1/4 inch thick.

Soak the Potatoes
Place the cut potato sticks in a large bowl of cold water. Let them soak for at least 30 minutes to remove excess starch, which helps make the fries crispier.

Heat the Oil
In a deep fryer or a large heavy pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can use a kitchen thermometer to check the temperature.

Dry the Potatoes
After soaking, drain the potato sticks and pat them dry with paper towels to remove excess moisture, which can cause splattering during frying.

Fry the Potatoes
Carefully add a batch of the dried potato sticks into the hot oil, making sure not to overcrowd the pot. Fry them for about 5-7 minutes or until they are golden brown and crispy.

Drain the Fries
Using a slotted spoon, remove the fries from the oil and place them on a plate lined with paper towels to absorb excess oil.

While the fries are still hot, sprinkle them with salt and black pepper to taste. Toss lightly to ensure even seasoning.
