    In a large pot, combine the beef tendon, five spice powder, minced garlic, sliced ginger, quartered onion, and water. Bring to a boil over high heat.

    Once boiling, reduce the heat to low. Add soy sauce, and season with salt and black pepper to taste. Cover and let it simmer for 1.5 to 2 hours until the tendon is tender.

    After the tendon is tender, add the sliced beef to the broth and let it cook for an additional 10-15 minutes, until the beef is cooked through.

Noodle Preparation

    In a mixing bowl, combine the all-purpose flour and a pinch of salt. Create a well in the center and add the egg and water. Mix until a dough forms.

    Transfer the dough to a floured surface and knead for about 5-10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
